Pesto Zoodles | Seed Oil Free Sides

Zucchini noodles, also known as "zoodles," are a healthy and delicious substitute for pasta! In addition to our Simple Fresh Pesto, this combo has the potential to replace your favorite go-to pasta dish.

Fun Facts: Zucchini are traditionally some of the cheapest veggies in the market and some of the easiest to grow yourself, making it an affordable option for many. Also, Zucchini is an animal-based approved side because while Zucchini is widely considered a vegetable, it is botanically classified as a fruit!

Here's a simple recipe for making zucchini noodles!


Ingredients:

Steps:

1 - Start by trimming off both ends on the zucchini

2 - Using a spiral or peeler, create long, thin strips of zucchini noodles. You can also use a sharp knife to cut the zucchini into thin “noodles carefully.” (I love this peeler, click here!)

3 - Heat the olive oil in a large skillet over medium heat.

4 - Add the zucchini noodles to the skillet and sauté for 2-3 minutes, or until the noodles are just tender.

5 - Season the noodles with salt and pepper to taste.

6 - Add the desired amount of Easy Fresh Pesto to the zoodles and stir until coated

Serve the zucchini noodles alone, with your own dish, or with our Lemon, Pepper Pesto Chicken!
