Beef and Bacon Stew | Seed Oil Free Dinner
Like most things, once you have a basic starting point, you can get creative and start to make it your own!
Stews are no exception. This recipe is a great base for whatever stew style you crave!
The meaty, wholesome and herby taste, is great for the winter or the next time you need a savory meal. Add your favorite spices, or enjoy as is!
If you want to take this stew to the next level, serve it with my seed-oil-free simple bread with some butter!
Ingredients:
1 lb stew beef (or more)
6-8 bacon strips - cut into one-inch sections
4 cups bone broth
1 med onion - diced
3 garlic cloves - diced
3 Rosemary sprigs - stripped and chopped
4-6 sprigs / 1 tsp fresh Thyme - stripped and chopped
4 fresh sage leaves - chopped
3 bay leaves
Salt and Pepper to Taste
Optional:
3 Small Purple Potatoes (See serving notes!)
1 - This step is an optional step but it can make your beef taste more tender. :) Add beef to a small bowl and drizzle 1 tbsp fat (I use avocado oil or melted beef tallow here)
2 - Add a pinch of salt and pepper to the beef and combine. Set aside on the counter until needed again. (It’s okay if it comes to room temp.)
3 - Heat a large pot on the stovetop on medium heat
4 - Slice bacon strips into one-inch sections
5 - Cook bacon bites in the pot until crispy (not burnt). When cooked, transfer bacon to a side dish or medium bowl until needed again. (leaving the bacon grease in the pot)
6 - Add diced onion to bacon grease and saute until onion is translucent, stirring occasionally (about 2-4 mins)
7 - Add minced garlic, chopped thyme, rosemary, and sage to the pot until fragrant (about 60 secs stirring continually)
8 - Transfer onion, garlic, and herb mixture to the side until needed again
9 - Add beef to the pot and brown on all sides (Get a little sere going for extra flavor)
10 - Add onion, garlic, and herb mixture to the pot and combine
11 - Add bone broth to the pot and bring to a boil
12 - Reduce heat, add bay leaves to stew, and let simmer for 60-90 mins.
13 - After your timer goes off, stir in crispy bacon bites, serve hot and enjoy!
Serving and Notes:
This stew is seriously “hearty” and will fill you up fast. However, if you want to take it to another level, you can add a few of these traditional ingredients!

A Different Take On the Potatoes:
Roasted sweet potatoes!
It’s not a traditional stew topping, but if you need to add a carb and different texture to your stew, this one is my go-to!
