Pan Fried Chicken Lemon Pepper Pesto | Seed Oil Free Meals

The best part of knowing how to cook is being able to whip up delicious food with things you have on hand and recipes you have in your head!

Eventually, you will replace all your favorite restaurants with your own food!

This recipe was created one night when I realized the only things we had in the fridge were a few zucchini, chicken breast, and some pesto that was about to go bad. Lol!

With a little butter and salt and pepper, we had delicious pan-fried chicken with zucchini pesto noodles in minutes!

Then, my husband had the great idea to add a squeeze of the fresh lemon we had on the counter.

Just like that, “Lemon Pepper Pesto” was created! Not only is it fun to say, but it’s easy, tasty, and one of our favorite whole food weeknight dishes.

Ingredients:

  • 2 cups fresh basil leaves, packed (roughly two hand fulls)

  • 1/2 cup extra-virgin olive oil

  • 1/2 cup grated Parmesan cheese

  • 1/3 cup of walnuts

  • 3 garlic cloves, peeled

  • Salt and pepper, to taste

For Pan Fried Chicken:

  • 2 large or 4 Small chicken breast

  • 2-3 medium zucchini

  • 1 tablespoon olive oil

  • Salt and pepper, to taste
