One Pan Steak And Sweet Potatoes For Two | Seed Oil Free Dinner

Beef and sweet potatoes are one of my favorite post-workout meals!

This flavorful combination typically shows up around our table as burger patties and sweet potatoes quickly roasted. Still, every once and a while, we like to scale up the fancy factor with this recipe.

It may seem like a lot of ingredients, but don’t be fooled - this meal is fast and simple.

Ingredients:

  • 1 Lb Steaks cut into 1-inch cubes (I use two large filets but you can use cheaper cuts like sirloin and just add more marinade time)

  • 1 tbsp coconut aminos

  • 2 tbsp avocado oil

  • 2 garlic cloves, minced

  • 2 tsp onion powder

  • 1 medium sweet potato

  • 3 tbsp ghee

  • 1-2 tbsp parsley, chopped

Steps:

1 - Cut the steak and sweet potatoes into bite-sized pieces and sprinkle with salt and pepper

2 - Prepare the marinade by mixing 2 tbsp of avocado oil, coconut aminos, onion powder, and minced garlic in a bowl or plastic bag.

3 - Add meat to marinade and toss

4 - Let rest at room temp for 20 mins (or longer for cheaper cuts and marinated in the fridge)

Heat 2 tbsp of ghee in a cast iron skillet on medium-high heat

5 - Once the pan is hot, carefully add sweet potatoes for 10-12 minutes or until the sweet potatoes are cooked and lightly crisp (stir every minute or so to avoid burning)

6 - Once sweet potatoes are cooked, set aside. In the same skillet, heat 1 tbsp of ghee over medium heat until pan is hot

7 - Add steak and cook for 3-5 minutes for medium-rare (increase the time by 2 mins for medium, 4 mins for medium well and so on)

8 - Reduce heat and stir in sweet potatoes and parsley

9 - Let sweet potatoes reheat for about 1-2 mins and stir occasionally to avoid burning.

Plate and enjoy!
