Easy Week Night Beef And Rice

Some people may read this recipe and think, how did this make it into a cookbook or on a cooking blog? This isn’t even a real recipe? But this one it has a special place in my heart.

Not all of your meals have to be “Instagramable” or even fancy.

As busy entrepreneurs, my husband and I don’t always have time to cook a big meal. Instead of swinging by a fast-food joint, we use this recipe as our “go-to” when we don’t know what to eat.

Also, if you really want to experience the “frequency” side of whole food, this is the dish to start with. I remember a night when Daniel and I were sitting on the floor in our apartment that had no furniture or decorations on the wall.

We ate this meal off of paper plates with plastic forks and began to cry because we were overcome by thankfulness. The level of abundance we were experiencing despite our lack of physical possessions and money at the time was not lost on us. We understood how these simple whole foods were put on the earth for us to enjoy and were designed to help us thrive from the inside out.

Beef, rice, avocado, and some real salt have been staples in the optimal human diet for thousands of years. I hope this simple story and recipe inspire you to enjoy the simple things as our ancestors did.

Ingredients:

Duplicate for larger batches

  • 1 pound of ground beef (or lamb)

  • Half a cup of cooked rice

  • 1 Avocado cubed or sliced for the end

  • 3 tbsps of butter divided

  • Salt and pepper to taste


Steps

1 - Start cooking rice on the stove by following the instructions provided by your rice brand of choice.


2 - In a skillet over medium-high heat, melt two tbsp of butter


3 - Cook ground beef in melted butter and add a pinch of salt and pepper

Don’t over-stir your ground meat - during the cooking process, parts of the meat will start caramelizing, which will lead to max flavor.


4 - When rice is cooked and add 1 tbsp of butter! When butter is melted, gently combined and “fluff” with a fork


5 - Mix cooked meat and rice or serve separately on a plate


6 - Top with avocado slices or serve separately on a plate


7 - Add additional salt and pepper as needed and enjoy!
