Beefy TexMex Sweet Potato | Seed Oil Free Meals

A lot of meat recipes require time and a lot of tender love and care...

This is NOT one of those!

This fast and easy recipe is great for anyone with a busy schedule. Use it for your next meal prep session or the next time you need something fast and want to skip the drive-through!

Also, if you are trying to add more meat to your life or you are working your way up to eating more animal protein during one meal, this is a great place to start!

Ingredients:

  • 1 lb of ground beef

  • 2 medium size sweet potato

  • 2 tbsp taco seasoning

  • 1 tbsp of Olive Oil

  • ¼ cup of water

Special Ingredient:

1/4 cup of Primal Kitchen Classic BBQ Sauce - If you don’t use this, add extra taco seasoning.

(When we have this on hand, I LOVE to add it! It turns the dish into an insanely flavorful meal without a lot of extra sugar, carbs, seed oils, etc. Plus, the tomato base makes it taste closer to a chili flavor!)

Steps:

1 - In a skillet, brown ground beef

2 - In a small bowl mix together taco seasoning and water

3 - Add seasoning and BBQ sauce to the meat and combined

4 - Allow beef to cook until the liquid is gone and the beef is done (see meat temperature guide if needed)

5 - In the meantime, using a fork poke small holes all over the sweet potatoes and cover them with olive oil, and a pinch of salt and pepper

6 - Place sweet potatoes on a microwave-safe plate and cook on high for 5 mins (cook longer in 2-minute intervals until cooked if sweet potatoes are larger)

7 - After cooking and slightly cooling, cut sweet potatoes in half, load them with meat, top with your favorite flavors below and enjoy!
