Ingredients:
🍌1 Banana
🥚2 eggs
🧈Butter
Optional:
• 1 tsp cinnamon
• Swap banana for cooked and cooled sweet potato
❤️Steps:
Option 1:
1️⃣ Start heating a large skillet over medium heat.
2️⃣ Peel the banana and add to a medium bowl.
3️⃣ Mash the banana with a fork until smooth.
4️⃣ Add eggs and cinnamon (if using) to the banana and mix until thoroughly combined (be careful not to over mix so eggs don’t scramble).
Option 2:
1️⃣ Add banana, eggs, and cinnamon (if using) into a small blender and mix for 30 seconds or until smooth.
Next:
1️⃣ Add half a tbsp of butter to the skillet until melted.
2️⃣ Scoop about ¼ cup of the mixture into the melted butter and cook for 3 mins or until the pancake has cooked enough to flip without falling apart.
3️⃣ After 3 mins, flip the pancake and cook for another 3 mins.
4️⃣ Repeat until all pancakes are made!
