Cheesy Italian Herb-Crusted Salmon | Seed Oil Free Meals

I used to get these delish salmon from the frozen section at one of my go-to health food stores that had cheese and Italian seasoning. Yum!

Well, it was one of the first things that had to fall off my shopping list after I started to eliminate seed oils in 2019.

I hope this recipe serves as a reminder that anyone can recreate their favorite store-bought goods when they know how to cook. And always check your ingredients; you never know where seed oils could be hiding. :)

Ingredients:

  • 2 salmon fillets (6-8 ounces each is typically what's available but you can go larger)

  • 1/2 cup shredded mozzarella cheese

  • 2 tablespoons Italian seasoning

  • Optional: Salt and pepper to taste

Steps:

1 - Preheat your oven to 400

2 - Line a baking dish with parchment paper or lightly grease.

3 - Season the salmon fillets with salt and pepper to taste.

4 - Sprinkle half the Italian seasoning evenly over the top of each fillet

5 - Bake the salmon in the preheated oven for 10-12 minutes

6 - Remove the salmon from the oven and sprinkle the shredded mozzarella cheese over the top of each fillet.

7 - Return the salmon to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly and the salmon is cooked through. I typically leave it in until the cheese starts to slightly brown and turn into a ‘crust.’
