Garlic Butter Chicken Thighs | Seed Oil Free Dinner
This perfectly crispy skin will have your brain thinking you’re eating at your favorite fried chicken joint!
I used to only cook with chicken breast, but after I tried these thighs I was converted. Thighs are way more flavorful and juicy and if you can get the skin right the crispy texture, you’ll understand what I am talking about. :)
Ingredients:
4-5 Chicken thighs with the skin on (bone-in)
¼ cup butter
1 tbsp olive oil (Or oil of choice)
Salt and pepper
3 gloves garlic
Steps:
1 - Preheat oven to 400 and move rack to center
2 - Pat chicken dry with a paper towel (This helps the seasoning stick to the meat better and will help the the skin to sear instead of steam for the crisp!)
3 - Season chicken all over with salt and pepper
4 - Add olive oil to a cast iron skillet over medium-high heat
5 - Place the thigh's skin side down in heated oil and cook for 5 minutes
6 - Flip thighs and cook for 5 more minutes
7 - Flip the chicken again to the skin side and sear for an additional 60 seconds if needed (If the chicken is larger it may need more time to make the skin crispy)
8 - Flip again and place butter in the center of the skillet and let melt
9 - With a spoon, carefully spoon the butter over the chicken a few times to coat it.
10 - Place cast iron in the oven and cook for 35 mins (or until chicken has reached the desired temperature and the skin is crispy)
11 - Remove from the oven and spoon butter/chicken juices over the chicken to coat for extra flavor. Let cool slightly and enjoy!
