Cheeseburger Meatballs | Seed Oil Free Meals

Meatballs are an unsung hero when it comes to fast and easy meals. You’ll notice we have a couple of meatball recipes in this cookbook, but each of them takes on its own unique flavor and style so you never get bored.


This recipe is an Atkins favorite because nothing beats the taste of a good old-world American burger. (Even without the bun!) We hope these bite-sized glories remind you of your favorite cookout memories and the ones who were behind the grill making it happen.

Ingredients:

  • 1 Pound of beef (double all ingredients for more than one serving)

  • ¼ cup “pork panko

  • 1 small white onion shredded with a cheese grater or extremely finely chopped

  • 1 tsp of pepper

  • ¼ tsp nutmeg - optional (This gives the meatballs a hint of sweetness you are used to tasting in the bread of a restaurant cheeseburger)

  • 4-6 slices of your favorite cheese cut into 4 sections

1 - Preheat oven to 425

2 - Line a baking sheet with parchment paper and set aside

3 - In a medium bowl mix together beef, pork panko, shredded/chopped onion, and seasoning until combined

4 - Roll into roughly 1-inch balls and place meatballs on the baking sheet

5 - Cook for 25-35 minutes until meatballs have reached the desired temperature and are slightly golden outside

6 - Remove meatballs from ovens and top with small cheese slices to melt on top and enjoy!
